One of our projects was to create a smoothie recipe. As all my superfoods were at home in the cupboard, I decided to stick to a fruity one. And I decided to experiment with mint.
Until now I’ve always felt that mint should be reserved for mint and not mixed with other flavours, However, I chose to introduce a hint of mint with the raspberry and I was very pleased with the delicate balance of fruity and freshness. I will be experimenting further…
Here’s the recipe for my smoothie:
3/4 cup almond milk
1 frozen banana, chopped
1 cup frozen raspberries
1 tbs hulled hemp
1 tbsp lecithin
1 tsp vanilla extract (maybe equates to 1/4 – 1/2 tsp vanilla powder?)
1 tbs raw honey
3 drops of peppermint extract
Put all the ingredients in a high speed blender and blitz until beautifully smooth.
